christmas_brunch_m-j_elegant_cook

A simple Christmas Day luncheon for two included home-made waffles, strawberries cooked with cane sugar  into an elegant sauce, heavy cream whipped with powdered sugar and vanilla, crispy bacon, chopped walnuts, maple syrup and butter. A percolator of Eight O’Clock Columbian Peaks coffee* stood ready to serve.©M-J de Mesterton, Christmas 2016

*Eight O’Clock coffee, the whole-bean Columbian Peaks, medium-roasted  variety, is my standard, as long as it’s available. I keep the opened, clipped bag in an air-tight red container as shown. Company instructions say to keep the beans or ground coffee at room-temperature, not in the freezer or refrigerator.

Bar-S Bacon, the Old West’s Best

Bar-S Bacon is the best that I have found in the U.S. When I was a child in the far west, we ate Cudahy Bar-S brand, which morphed into Cudahy and then became the Bar-S that we know today.
Sure, Neuske’s is supposed to be the very finest bacon, but it is not only expensive but difficult to find. Bar-S seems to be available in all fifty states!

M-J de Mesterton’s Eggs Vienna Recipe

An old friend of mine used to make this dish for me in the 1970s. I published my recipe for the unusual breakfast offering on Elegant Survival in 2006; it was for a long time the only recipe for Eggs Vienna on the internet. I shall reconstruct it here at Elegant Cuisine:
Eggs Vienna for Two

Prepare four slices of streaky American-style bacon until they are crisp. Poach two eggs in two cups of boiling milk, until they are soft. Toast two slices of white bread or English muffins, then butter them. When all three components are ready, place one piece of  toast in each of  two soup-bowls. Place two slices of  bacon on top of each piece of toast, then top that with a poached egg. Pour the remaining hot milk, in which the eggs have been poached, into each bowl.
