Tiny, Highly-Functional Kitchen

One doesn’t need lots of space to have an elegant, organized kitchen like the one pictured here. Things just need to co-exist in coherent fashion. Large, white appliances combined with lemon yellow, orange and lime green cookware can give a unified appearance; I call the effect “harmonious clutter”. All the many tools in this kitchen are used frequently, so there really is no wasted space.
Heavy French and Danish pans are hung on stainless steel carts with practical S-hooks from the hardware store, saving the home-cook lots of kneeling and heavy-lifting at low cabinets. Ladles, spatulas, can-openers and other essential kitchen tools are hung the same way for easy access.
Cookware-Cleaning Tip: stubborn stains on cookware, sinks and fixtures can be reduced or eliminated by scrubbing them with a paste made by combining cream of tartar and a little vinegar. This acidic mixture is often more effective than an abrasive chlorine-based cleanser.

Home-Made French Bread

French Bread Made at Home: Worth the Trial and Error, Time and Effort

The internet is full of recipes for pain Français. Choose the one that seems right for your kitchen, because people have varied results depending on many factors. There is a detailed tutorial at The Sour Dough blog, based upon the French bread recipe and method of Julia Child. Here is another instructive page, at the Smithsonian museum, which houses Julia Child’s television kitchen. Remember to use only unbleached white flour, and to create moisture in the oven while your loaves are baking.

Making Sausage at Home

Merguez avec Brioche
M-J's Home-Made Brioche with Sausage

Why bother making your own sausage? Because you can choose the sort of casings and ingredients, ensuring that you won’t be ingesting something that makes you cringe. For example, I think the beef-collagen casings sound more appetising (if there is such a thing where sausage casings are concerned) than “natural” ones. Here is a SAUSAGE-LINK. The SausageMaker.com has everything one needs to make sausage at home, except the meat.

I received an email notice from Chefs.com this morning, which contained a plug for the Kitchenaid Mixer’s Breakfast Kit. It includes a sausage-making attachment, a juicing tool, and something to help one make salsa. I am intrigued by this, and it is now on my wish-list. If I ever acquire the breakfast tool kit, I shall review it here at Elegant Survival News.

A classic pound-cake is hollowed-out in the middle, filled with vanilla ice cream, topped with meringue, and baked for a few minutes until the edges are lightly-browned. This “Alaska” cake  is ready to be baked.

Elegant Tahini Sauce

M-J’s Simple Recipe for Elegant Tahini Sauce
Sesame paste mixed with lemon juice, water, salt and the merest hint of garlic powder makes an elegant tahini dip or sauce for mezedes, or pre-prandial appetisers.

Use this elegant and simple tahini sauce as a dip for flat-breads, steamed cauliflower, celery, other fresh vegetables, and fried potatoes. Optionally, you may drizzle olive oil over the tahini.
People find tahini sauce very pleasing in the summer months, and it is economical to make, since the sesame paste expands greatly when mixed with water and lemon juice.
