Elegant Strawberry Desserts

Strawberry desserts are simple. Just arrange washed and trimmed fresh berries on pound cake slices, shortcakes, or angel food cake, and decorate with whipped cream. According to the American Algonquin tribe, Strawberry season begins this year on Summer Solstice, which is always the longest day of the year–seventeen hours long, to be precise. This full moon coincides with strawberry season’s start in the Northern Hemisphere once every seventy years, which is why the June 20th, 2016 full moon is called “Strawberry Moon“. ©M-J de Mesterton 2016

Angel-Food Cake with Strawberries and Cream

A slice of angel food cake is adorned with fresh strawberries and whipped cream applied with a pastry bag, for an easy-to-prepare, elegant dessert. This angel food cake was store-bought, as it is challenging to produce at home. Serve strawberries-and-cream on any sort of vanilla or white cake to create a brilliant ending to luncheon or dinner.

M-J’s Low-Carb Almond Cookies

M-J’s Almond Cookies are low in carbohydrates, and high in protein.  Mix together in a large bowl:

Ground Almonds, 1 1/2 cups

One tablespoon of flour

Almond or Peanut Butter, three tablespoons

Egg Whites, 2

Pomegranate Juice or water, 1/4 cup

Ground Flax-Seed, 1/4 cup (optional)

One tablespoon of coconut oil

Splenda or Stevia, 1/2 cup or to-taste

Baking Powder, 1 teaspoon

Ginger, 1 teaspoon

Cinnamon, 1 teaspoon

Shape dough into balls and flatten them on an un-greased cookie sheet, and bake in moderately hot oven.

Watch cookies carefully; they will brown quickly on the bottom, so it may be necessary to move them to a higher oven rack during the last few minutes of baking.

Fill a hollowed-out pound-cake with ice cream, preferably vanilla. Trim the top (see left) so that it is thin at its bottom, and place it on top of the ice cream. Prepare regular meringue with egg-whites and sugar. Frost the ice-cream-filled cake with it and bake the assembled dessert in a medium-hot oven until lightly browned.

Use an oven-proof platter, because transferring this delicate dessert to a serving-dish is likely to damage its careful construction.
This plate is made in Japan by Noritake, in the Blue Adobe pattern.


Bring your Baked Alaska to table while the meringue is still hot. Place the platter on a heat-proof pad or trivet. Cut this elegant dessert into sections and serve it as soon as possible so that the ice-cream filling will be cold and the meringue coating remains warm.

Elegant, nutritious sorbet is easily made at home with frozen fruit. I made this one with frozen strawberries and canned pineapple, a little bit of honey, all processed in a Cuisinart and frozen again for an hour.

Pound Cake for Elegant Desserts

Pound cake is expensive to make, and may not turn out the way that you like. Elegant Survival  published the news last year that pound-cake can be bought in three-packs at warehouse stores like Sam’s Club for about two dollars each. 

I have used these pound-cakes successfully for making baked Alaska, in combination with vanilla ice cream and meringue. Strawberry or raspberry jam may be layered into the cake as well. Please see my Elegant Dessert page for Valentine’s Day dessert ideas.
